300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Combine the listed components inside a pot, heat until it reaches a gentle boil, stirring to dissolve. Then, turn off the stove and leave to reach room temperature entirely. Decant into a sterilised bottle, seal keeping it in the refrigerator, it will last for around a month.

Preparing the Cocktail Base: Combine every spirits and syrup into a sizeable container, allow it to infuse for an hour, then filter it best through muslin, to ensure it's fully clarified.

To serve: Add 85ml of the batch mix to a cocktail shaker packed with ice, and stir carefully for about 60 seconds until cold. Strain into an frosted cocktail glass or equivalent, top with a few cranberries adding the final touch using a light spray of the essential oil over the drink.
